Alpha Amylase Enzyme is used as a mashing aid to convert starches into simple sugars that are fermentable by brewing yeast and are typically used for all-grain batches.
- Alpha Amylase is often used during fermentation for most types of beer and craft spirits
- Alpha requires a higher working range temperature (about 152 – 158 degrees F) than Gluco Amylase
- Although Alpha IS used with something like baker’s yeast, you DON’T need to add it if you’re using many turbo yeasts
